Bridor announces the launch of a collection of exceptional viennoiseries in partnership with pastry chef Pierre Hermé. Implemented in more than 100 countries and world leader in the bakery viennoiserie sector, Bridor carries with pride the french baking  know-how all around the world. Pierre Hermé has more than 50 shops, spread across 12 countries, and offers modern recipes that bear in every step of their creation the seal of luxury.

Quickly, both men end up with a common ambition: developing a collection of viennoiseries combining quality, savor and enjoyment.

“I was impressed by the manufacturing process, and the rigorous way Bridor selects its raw materials. I particularly liked the precision at every step in the production workshops, as well as the rigorous technicality in the creation of products” explains Pierre Hermé.

The story of this collaboration is also the story of shared values; a deep respect for the expertise of artisan bakers, and a particular care taken in the selection of raw materials.

Guided by these shared values, Pierre Hermé and Bridor imagined five recipes of Exceptional Viennoiseries. For these recipes, Pierre Hermé applied the same expectations that he has for the Maison Pierre Hermé’s creations. He therefore imagined each association of taste and texture and each flavor with the finesse that characterises him.

A particular attention has been paid to the selection of raw materials. Thus, this whole collection of viennoiseries is made with french wheat and butter from Brittanie (Bretagne). As for the chocolate, the choice was set upon an exceptionally pure chocolate originating from Madagascar, exclusively made for Pierre Hermé. Finally, the Vitamin C needed for the dough’s elasticity, which is usually synthetic, is now replaced by Vitamin C of natural origins, extracted from acerola

The collection thus associates the skills and expertise of Bridor with the taste and texture of the World’s Best Pastry Chef.

Each creation was thought to embody the quality and expertise so dear to both companies

Mini Croissant and Pain au Chocolat from Madagascar

Among the viennoiseries conceived in this exceptional collaboration, two are proposed in small format: a Croissant, perfectly crispy, with buttery and sweet notes to it; and a Pain au Chocolat with an incomparable puff pastry, associated to pure chocolate from Madagascar, only slightly sweet, but also powerful and sour.

Almond and Pistachio’s stuffed Croissant

To these first mini viennoiseries duo are added two gourmet croissants. The first one is stuffed with Almonds and Pistachios. Crusty layers and soft inside come together, revealing the California’s almond and pistachio flavor. A crunchy topping formed by roasted pistachios, to emphasize on the dry fruit’s taste.

Almond and Lemon Croissant

The second gourmet creation combines Almond and Lemon for a unique experience characterised by the contrast between the taste of Almond and the singular and striking note of the Sicilian lemon, associated with lemon zest. A millet topping brings in an additional crunchy touch.

Ceylan’s Cinnamon and Apple Triangle

Finally, an Apple and Ceylan Cinnamon complete this high-end collection: a new look on the apple turnover, this unprecedented recipe combines the incredibly soft and smooth texture of traditional French applesauce, whose fruity and fresh taste is sublimed by the Ceylan’s Cinnamon, and the crusty crêpes bringing all the delicacy necessary to the recipe.

The partnership between Bridor and Pierre Hermé Paris takes place in the continuity of Bridor’s engagements. For more than 30 years, the bakers, engineers, and quality expert teams at Bridor have been imagining and creating viennoiseries essentially made from pure butter, in the spirit of French tradition, and inspired by traditional artisanal methods: slow kneading, long fermentations and a respect of resting time.

Rigorously selectionned raw materials

Unyielding on the quality as well as on the taste of its products, Bridot takes particular care selecting the raw materials that they are made of. These materials must comply with certain controls and regulations in order to fit the companies criterias of excellence: in majority labelled and certified, they originate from France, produced near our production sites, and care about animal welfare.
