One Man's Vision

Born in 1946 in Cléder, Brittany, Louis Le Duff began as a market gardener's apprentice on the family farm before pursuing business studies in France and later in Canada. In 1971, while a student in Montreal, he created his first crêperie—a foundational experience that shaped his international outlook.

Upon returning to France, he launched Restaurel in 1974, then took over a bakery in Brest in 1976 where he invented the innovative concept of the French-style bakery-café. The success of Brioche Dorée marked the beginning of rapid development both in France and internationally, making him an ambassador of French expertise.

A Doctor of Management Sciences and former senior lecturer at the University of Rennes, Louis Le Duff is also committed to passing on knowledge and is the author of several books. Deeply attached to his Breton roots and human values, he has been honored with high distinctions, including the National Order of Merit and the Legion of Honor.

The Group's development

THE BEGINNINGS

Born on a vegetable farm in Cléder-Plouescat, in northern Finistère, Brittany, Louis LE DUFF left school at the age of 15 to work alongside his family as a vegetable grower and trader. Two years later, he returned to his studies with the ambition of becoming an entrepreneur. After earning his high school diploma and graduating from ESSCA at the age of 24, he travelled to North America on a scholarship.

In 1976, Louis LE DUFF made a visionary move by opening the very first Brioche Dorée restaurant on Rue Jean Jaurès in Brest. Inspired by his time in North America, the concept was innovative: combining the efficiency and speed of modern foodservice with the traditions of French baking and cuisine.

A BOLD VENTURE

Faced with the success of Brioche Dorée and determined to ensure consistent quality across his restaurants, Louis LE DUFF decided to produce his own products.

In 1988, a new subsidiary was created: Bridor, whose name is derived from Brioche Dorée. The company specializes in the production of bakery and viennoiserie products for foodservice professionals, the hospitality industry and retail.

THE BIRTH OF INDUSTRIAL EXPERTISE

Its production methods draw on traditional bakery and culinary expertise to preserve the excellence of classic recipes. Through its Culinary Academy, the Group collaborates with renowned chefs, including Gaston LENÔTRE and Pierre HERMÉ, Meilleurs Ouvriers de France (MOF) such as Frédéric LALOS and Jean-Jacques MASSE, as well as nutrition specialists, to create premium recipes.

Groupe LE DUFF has made the development of its industrial division—comprising BRIDOR (premium bakery and viennoiserie products) and GOURMING (vegetables and traditional-style prepared dishes)—a major strategic priority.

Today, Groupe LE DUFF operates in more than 100 countries across five continents and is committed every day to offering high-quality products made from carefully selected ingredients chosen for their authenticity.

GLOBAL EXPANSION

BRIDOR has significantly accelerated its growth, increasing its revenue from €750 million in 2021 to €2.5 billion in 2026. BRIDOR is investing in the construction of new production facilities, the expansion of existing sites, and acquisitions worldwide. From 2021 to 2031, BRIDOR’s global investment plan amounts to €6 billion.

This strategy has resulted in major acquisitions in the United States (Lecoq Cuisine), Europe (Pandriks, Panidor) and Asia-Pacific (Laurent Bakery), as well as the opening of multiple production facilities around the world, including in the United States, Switzerland, China and France.

Most recently, the acquisition of Spanish group Panamar Bakery in March 2026 (€600 million in revenue in 2026)—Groupe LE DUFF’s largest acquisition to date—further strengthens BRIDOR’s position as a global leader in premium bakery and viennoiserie products.
